Hey guys! I’m starting a new #selflove series on my YouTube channel and included this yummy recipe in the first video of the series (Self Care Pamper Routine). Carrot Cake is one of my favorite desserts and these Carrot Cake Bliss Balls are the perfect sweet treat for when cravings hit. They’re indulgent yet packed full of nourishing ingredients!
1 cup pitted dates
2 cups shredded carrots
1 1/2 cups pecans
1 1/2 cups dried apple
1 1/2 cup shredded dried coconut
1/2 tsp cinnamon
1/2 tsp sea salt
1/2 tsp nutmeg
1. Soak dates for an hour in water to soften (optional)
2. Ground pecans in food processor to a fine meal
3. Add all ingredients in the food processor and process until combined. (if your food processor is small like mine you may need to do this in batches)
4. Roll into balls *optional – roll balls in shredded dried coconut or cinnamon
5. Refrigerate for 20 minutes, or eat right away if you’re impatient like me 😉
